Quick and easy lentil soup

Enza's Winter Warmer

              1 cup of green lentils

              1 cup of red lentils

              1 onion chopped

              ½ cup of chopped celery

              2 potatoes chopped

              Hand full of cherry tomatoes sliced in half

              1 zucchini chopped

              1 carrot chopped

              1 cup of chopped pumpkin

              1 or 2 cubes of vegetable stock (or your own home made stock)

              ¾ cup of parmesan cheese

              Parsley for garnish

             

Place all of the above ingredients into a large pot over a medium heat.  Add enough water until all the ingredients is covered and bring the ingredients to boil, then simmer for another 30 to 40 minutes and remember to stir occasionally. Once cooked add the parmesan cheese and stir it through. Finally, garnish with the parsley!
