Broccoli & Shiitake Soba Noodles
A Winter Warmer Recipe from the NIIM Dispensary Team
The friendly Dispensary team at the National Institute of Integrative Medicine are known for their delicious recipes. Here is one from Clinical Naturopath Lisa Hodge for Broccoli & Shiitake Soba Noodles.
Ingredients
Soba noodles
1 head of broccoli, chopped
2 tbsp coconut oil
1 handful of shiitake mushrooms, sliced
1 lemon, juiced
1 tsp of fresh ginger, grated
2 garlic cloves, crushed
4 tbsp tamari
1 tbsp apple cider vinegar
1 avocado, sliced
2 tbsp sesame seeds
Dulse flakes, to taste
Chilli flakes, to taste (optional)
Method
1. Cook the noodles according to the packet instructions.
Once cooked, place the noodles in a bowl.
2. Steam or boil the broccoli for 3 minutes, then add it to the bowl.
3. Heat a frying pan over medium to high heat and melt the coconut oil. Fry the mushrooms for about 5-7 minutes, then add to the noodles.
4. Slice avocado, then add to noodles.
5. Whisk together the lemon juice, garlic, ginger, tamari and apple cider vinegar in a small bowl. Pour it over the noodles. Top with sesame seeds, dulse flakes and chilli flakes.
